Sweet Pea Herb Salad

Recipe makes 6 Servings

8 Oz fresh raw English peas
8 Oz sugar snap peas, woody ends trimmed
3 Tbsp Dip It Gourmet Yogurt Dip, Cilantro
2 Tbsp Central Market Lemon Olive Oil
1 Tbsp fresh mint, finely chopped
1 Tbsp fresh basil, finely chopped
1/4 cup(s) green onions, very thinly sliced diagonally
1/4 cup(s) radishes, very thinly sliced
1/2 Tsp sea salt
1/2 Tsp black pepper, freshly ground

Pour English peas in a medium sized mixing bowl. Trim woody tips from sugar snap peas. Add to bowl.
In a small bowl whisk together yogurt and lemon olive oil. Pour over peas and stir to coat.
Add both herbs, green onions, radishes, salt and pepper. Toss gently. Allow to sit for 30 minutes prior to serving for flavors to come together.
This is a raw crunchy salad. If softer peas are preferred, bring a pot of water to a boil and boil both kinds of peas briefly for 1 minute. Plunge into cold water to stop cooking and make salad as described above.
