Ingredients

Recipe makes 4 Servings

1 Tsp pure olive oil
1 Tsp garlic, chopped
1 Tsp ginger, grated
2/3 cup(s) vegetable broth
1 cup(s) tomato, chopped
1 Tbsp ketchup
1 Tbsp white vinegar
1 Tbsp honey
24 shrimp, peeled and deveined
1 cup(s) pineapple chunks
1/2 cup(s) green onions, chopped
1 Tbsp Argo Corn Starch
2 Tbsp water

Instructions

Heat oil in a nonstick pan over a medium-high flame.

Add in garlic and ginger and cook, stirring constantly for about 30 seconds.

Add in vegetable stock, tomatoes, ketchup, vinegar and honey and bring to a boil.

Add in the shrimp, pineapple and green onion. Stir and bring mixture back up to a boil.

Combine the cornstarch with 2 tablespoons of water and stir in the pan. Allow the sauce to thicken.

When sauce has thickened, after approximately 4 minutes, remove from heat and serve.
