Sweet-and-Sour Salmon Skewers

Recipe makes 6 Servings

1/2 cup(s) H-E-B More Fruit Peach Mango Spread
1 Tbsp H-E-B White Wine Vinegar
6 skewers, soaked in water 20 mins.
1 white onion, cut into 1 1/2-inch chunks
12 Oz salmon fillets
1 red bell pepper, cut into 1 1/2-inch squares
1/2 pineapple, cut into 1 1/2-inch chunks
16 Oz steamable white rice

Prepare charcoal or gas grill to 350°F.
Combine peach mango fruit spread and vinegar in a small bowl. Divide between 2 bowls, and set aside.
Prepare skewers as follows: onion, salmon, bell pepper, and pineapple. Repeat until skewer is full. Set skewers aside on foil-lined baking sheet.
Brush skewers with half of the sweet-and-sour sauce.
Grill skewers for 3 minutes on each side.
Prepare steamable rice in microwave according to package directions.
Serve grilled skewers over rice and top with remaining sweet-and-sour sauce.
