Recipe makes 8 Servings

1 Boston lettuce
1 green leaf lettuce
1/2 cup(s) Hill Country Fare Natural Sliced Almonds
1/4 cup(s) extra virgin olive oil
2 Tbsp red wine vinegar
1 orange, zested
3 Tbsp Hill Country Fare Orange Juice
2 Tsp cane sugar
1 Tsp poppy seeds
1/4 Tsp iodized salt
1/8 Tsp black pepper, freshly ground
1 Lb fresh strawberries, thinly sliced
1 small red onion, thinly sliced
11 Oz Hill Country Fare Mandarin Oranges

Wash and dry lettuce leaves.
Toast almonds and set aside.
Tear leaves into a large salad bowl and refrigerate until ready to serve.
Prepare dressing by whisking olive oil, vinegar, zest, juice, sugar, poppy seeds, salt and pepper in a small bowl; refrigerate until ready to serve.
Right before serving, slice strawberries and red onion; toss with lettuce and oranges.
Drizzle dressing over salad and toss gently. Top with almonds and serve immediately.
NOTE: Toasting heightens the flavor of nuts. To toast almonds, place them in a small skillet over medium heat 5-7 minutes or until light golden, stirring often.
Watch carefully to prevent burning. Almonds may also be roasted in a 350°F oven.
