Ingredients

Recipe makes 4 Servings

1/2 Tbsp olive oil
1/2 Tbsp red wine vinegar
1/2 Tsp dijon mustard
14 Oz salmon in a can, drained &bones discarded
1/2 iceberg lettuce, torn into bite-size pieces
4 green onions, chopped
1/2 cup(s) parsley, chopped

Instructions

Combine the olive oil, vinegar and mustard in a salad bowl and stir well with a fork.

Flake the salmon and add to the dressing and toss gently.

Layer with lettuce, green onion and parsley over the salmon, cover and refrigerate until ready to serve.

Toss the salad before serving. Season to taste.
