Preheat grill to medium high heat.
Divide ground beef into 8 equal parts. Form 8 patties to fit on the ciabatta rolls when cooked.
Place a cheese slice, 3 pickles and a ham slice on four of the patties so that filling does not go all the way to the edges.
Top with another patty so cheese, pickles and ham are completely contained inside. Pinch edges together firmly but gently.
Refrigerate for 20 minutes before cooking.
Cut ciabatta in half and smear with butter. Place on grill to toast lightly.
Spread mustard on one half and mayonnaise on the other half.
Cook on each side for 4 to 5 minutes, or until cooked to desired doneness.
Place burgers on ciabatta and enjoy.
