Strawberry Coconut Snack Bites

Recipe makes 12 Servings

1 cup(s) strawberries, stems removed
1/2 cup(s) walnuts, chopped
1/4 cup(s) flax seeds, ground
1 cup(s) oats
1/2 cup(s) unsweetened shredded coconut, plus more for coating
1/4 cup(s) maple syrup
1 Tbsp vanilla extract
1 Tsp lemon zest
1/3 cup(s) coconut oil

Mash fresh strawberries thoroughly with a fork or chop finely with a knife and place in bowl, set aside.
In a food processor combine walnuts, flax seeds, and oats together and pulse to create a meal.
Next add in coconut, maple syrup, vanilla extract, lemon zest and coconut oil. Continue to pulse until everything is well incorporated.
Finally, add in smashed strawberries and mix well.
Line a plate or sheet pan with wax paper, roll 2 tablespoons of mixture together to form bites. Coat with additional coconut and freeze for 3 to 4 hours. Store in freezer in an airtight container.
