Strawberry Basil Balsamic Grilled Cheese

Recipe makes 2 Servings

2 Tbsp butter
4 slices of country white sourdough bread
1 cup(s) strawberries, sliced
6 Oz fresh mozzarella, chopped
1/4 cup(s) chopped basil
1 Tbsp Fini Balsamic Reduction

Heat 1 tablespoon of butter in a non-stick skillet over medium-low heat.
Place 1 piece of bread into the skillet and top with half of the strawberries, cheese, basil and a drizzle of balsamic reduction. Top with the second slice of bread and gently press with spatula.
Cook for several minutes until crisp and golden on the bottom then flip adding additional butter if needed. Continue to cook until the other side is also crisp and golden.
Repeat with the second sandwich.
