Instructions

1
Preheat oven to 450F.
2
Spray pan release on a foil lined baking sheet. Place frozen Cowboy Steak Fries into one layer on baking sheet and bake 9 to 10 minutes (until lightly browned underneath), remove from oven and turn product over. Bake for an additional 3-4 minutes (until lightly browned underneath).
3
Meanwhile, place a medium non-stick pan over medium heat and add melt butter in pan. Add garlic and onions and cook until just starting to change color.
4
Add flour and whisk until flour has a nutty smell and begins to darken slightly, about 5 minutes. Add stock and reduce heat to low. Whisk constantly until sauce thickens approximately, 10 to 12 minutes.
5
Season gravy to taste with salt and pepper and place over low heat until ready to use. Place fries on a serving dish, place cheese curds around fries and pour gravy over curds and fries while still hot. Toss to combine.
6
Garnish with chives and serve immediately.
7
Chef's Note: I like to also add chopped crispy bacon to make it a bit heartier.
