1 Tbsp olive oil
2 cup(s) star fruit, large dice
1 Tbsp ginger, grated
1/2 cup(s) red onion, medium dice
1/2 cup(s) red bell pepper, medium dice
1 Tbsp garlic, chopped
1/2 jalapeño, halved, stem removed
2 Tbsp brown sugar
1 Tbsp salt
2 Tbsp limes, juiced
1 Tbsp cilantro, finely chopped

Instructions

Heat a medium non-reactive saucepan over medium heat, then add oil. Add in star fruit, ginger, red onion, red bell pepper, garlic, and jalapeño. Cook stirring frequently for 3 to 4 minutes until onions begin to soften.

Add brown sugar, salt, and lime juice and stir to dissolve. Reduce heat to medium-low and cook stirring occasionally for 20 minutes.

Remove pan from heat, stir in cilantro and remove jalapeño if desired. Mash with a fork until no large chunks remain (or place in a food processor or blender and pulse until combined). Refrigerate until ready to use.
