Ssam Pork Tenderloin with Jasmine Rice and Fried Egg

Recipe makes 4 Servings

1 Lb pork tenderloin, sliced into 1/4 inch medallions
2 Tbsp avocado oil, divided use
1/2 cup(s) Better Way Provisions Ssäm Sauce, divided use
4 large eggs
2 cup(s) jasmine rice, cooked

Heat a large non-stick skillet over medium-high heat. Season pork generously with salt and pepper, half the oil, and half the sauce.
Cook medallions for several minutes per side until well browned and cooked through. Remove from pan and set aside.
Add remaining oil and fry eggs sunny-side up. Remove eggs from pan and keep warm.
Add 1/3 cup of water or mirin to the pan along with the remaining ssäm sauce. Stir and bring to a simmer then remove from heat.
To serve, divide rice evenly among 4 bowls then top with pork medallions, fried egg and pan sauce.
