1 Tbsp olive oil
1 cup(s) onion, diced
2 Tbsp garlic, minced
2 cup(s) kale, chopped
15 Oz white beans, with liquid
32 fl oz low sodium vegetable stock
1 cup(s) green peas
2 cup(s) zucchini, chopped
1/4 cup(s) parsley, chopped
1 lemon, juiced
1/4 cup(s) basil, chopped
1 Tsp salt
1/2 Tsp black pepper

Instructions

Place a large stock pot on medium-high heat, add in olive oil.

Add onions, garlic and kale, and cook for several minutes, stirring frequently.

Add white beans, vegetable stock, peas, zucchini, parsley, lemon, basil, and season to taste.

Simmer for 10 to 20 minutes, or until zucchini is tender.

Serve warm.
