Recipe makes 6 Servings

2 Tsp olive oil
1 shallot, minced
2 garlic, minced
1 zucchini, minced
1 1/2 Lb extra-lean ground beef
1 cup(s) Hill Country Fare Whole Wheat Bread Crumbs
1 egg, beaten
1 Tsp black pepper
3 cup(s) spinach, chopped
1/2 cup(s) feta cheese

Preheat oven to 400°F.
In a small saucepan, heat oil and cook shallots, garlic, and zucchini until tender. Remove from heat and set aside.
In a large bowl, combine beef, half of bread crumbs, shallot-garlic-zucchini mixture, eggs, and pepper. Mix well with hands.
Lay a piece of plastic wrap, about 12 inches, over work space and sprinkle with remaining bread crumbs.
Empty meat mixture onto plastic wrap and press into rectangle.
Place spinach and cheese onto beef mixture, leaving 1 inch border.
Using plastic wrap as a guide, begin to roll-up meatloaf.
Discard plastic wrap and place meatloaf onto foil-lined sheet pan.
Bake 40 minutes, or until meatloaf is cooked thoroughly.
