3 bacon slices, finely chopped
1 H-E-B Breakfast Starter Kit
1 Tsp H-E-B Texas Prime Coarse Seasoning
1 The Texas Pie Company Original Pie Dough Puck
6 large Central Market Pasture Raised Large Brown Eggs
1/2 cup(s) H-E-B Select Ingredients Non-Fat Plain Greek Yogurt

Preheat oven to 375°F. Place a baking sheet in oven to heat up while oven heats.

Heat a skillet over medium-high heat. Add bacon. Stir and and cook until halfway crisp. Add mushrooms, onion and bell pepper from H-E-B Spinach Mushroom Breakfast starter kit. Add seasoning. Sauté, just until onions start to soften.

Turn off heat. Add spinach from Breakfast Starter Kit to skillet. Stir through, just to wilt. Remove contents of skillet to a plate and allow to cool slightly while preparing crust and eggs.

Roll out pie crust to fit an 8 or 9 inch pie pan. In a medium sized bowl whisk together eggs and yogurt.

Add cooked spinach mixture to pie crust. Pour egg mixture gently over other ingredients and spread out evenly. Top with cheese from Breakfast Starter Kit. Place on pre-heated baking sheet and bake for 45 to 55 minutes, or until eggs are firm and crust is golden brown.
