Recipe makes 8 Servings

8 Oz mushroom, sliced
14 Oz artichoke hearts, rinsed, drained and chopped
1/4 cup(s) small onion, sliced
2 Tsp H-E-B Whole Peeled Garlic, chopped
5 cup(s) low sodium vegetable broth
2 Tbsp olive oil
1/2 cup(s) hearts of palm, chopped
12 Oz whole wheat fettuccine, broken in half
2 Tsp Italian seasoning
8 Oz baby spinach, chopped

Instructions

Combine mushrooms, artichokes, onion, garlic, vegetable broth olive oil, hearts of palm, fettuccine, and Italian seasoning in a large pot. Cover and bring to a boil.

Once liquid begins to boil, reduce heat to a simmer.

Cook 10 to 15 minutes or until most of the liquid has been absorbed. Stir frequently so pasta does not stick.

Once pasta has reached desired degree of doneness, add spinach and stir.
