Recipe makes 6 Servings

12 lasagna noodles, cooked, drained & patted dry
10 fl oz frozen spinach, thawed, drained thoroughly & chopped
1 cup(s) artichoke hearts, packed in water, drained & chopped
1 Tsp Italian seasoning
16 Oz skim ricotta
1 egg, beaten
1/2 Tsp red pepper flakes
1 cup(s) part skim mozzarella
2 cup(s) classic marinara

Lay lasagna noodles flat on a clean surface.
Place chopped spinach and artichokes in a large bowl.
Add seasoning, ricotta, egg and red pepper flakes, and mix well until all ingredients are incorporated.
On each lasagna noodle spread a layer of artichoke mixture the entire length of the noodle, sprinkle with mozzarella, then roll up.
Place in a greased baking dish seam side down. Repeat until all noodles and filling are used. Cover with marinara sauce.
Bake at 400°F for 30 minutes.
Serve immediately.
