Spinach and Caramelized Onion Quiche

Recipe makes 5 Servings

2 Tsp Pure Olive Oil
1 cup(s) yellow onion, julienned
1 cup(s) super sweet cherry tomatoes
1 spinach
2 clove garlic, minced
8 eggs
4 fl oz H-E-B Select Ingredients Reduced Fat 2% Milk
2 Oz Parmesan cheese

Preheat oven to 375ºF.
Place large sauté pan over medium-high heat. Add olive oil and onions. Cook several minutes until onions are very tender and a deep golden color. Stir frequently.
Turn heat up to medium-high and add in tomatoes, spinach and garlic. Cook several minutes until spinach is completely wilted. Remove from heat.
Combine eggs and milk together and mix well.
Spray spring form pan or pie pan with nonstick cooking spray.
Add spinach mixture and pour liquid on top.
Sprinkle with Parmesan cheese and place in oven. Bake until center has set. Let quiche cool before slicing.
Serve with mixed green salad.
