Preheat oven to 400ºF.
Add olive oil to a sauté pan over medium-high heat. Crumble meatballs like ground beef and sauté 3-5 minutes.
Add onions, garlic, and mushrooms. Stir-fry until garlic and onions are slightly browned and meatballs are fully cooked. Remove from heat and set aside to cool.
While meatball mixture cools, line a sheet pan with parchment paper.
Stretch pizza dough by hand to a 10-12" circle. Lay on prepared pan.
Spoon 1-2 cups cooked meatball mixture down the center of the entire length of dough.
Spread cheese evenly over filling and fold pizza dough over to join edges, like a calzone or half circle shape.
Seal stromboli by pinching dough together between fingers like the edges of a pie crust.
If desired, brush top of stromboli with leftover pan drippings from filling to give a nice golden color. Bake 15-25 minutes or until dough is golden brown.
Cool, slice and serve.
