Spicy Steamed Mussels with Chorizo

Ingredients

Recipe makes 6 Servings

3/4 cup(s) dry white wine
2 Tbsp lime juice
1 jalapeño
1 bunch cilantro, leaves only, stems discarded
1 medium shallot
4 cloves of garlic, smashed
2 Lb live mussels
1 cup(s) Dos Mamacitas Chorizo, crumbled
3 Tbsp unsalted butter
1/2 cup(s) green onions, chopped

Instructions

In a blender add white wine, lime juice, jalapeño, cilantro, shallot and garlic together. Blend until smooth, set aside.

Rinse mussels under cold water discarding any open shells that don't close when tapped on the edge of the bowl. Remove any beards attached to mussels. Set aside with a cold towel over them.

Set a large pot with tight fitting lid over medium heat. Add chorizo and cook until fat has rendered and meat is cooked. Add in mussels and stir fry for 1 minute in fat then add blender liquid and put the lid on.

Turn heat to high and cook for 4-5 minutes or until all mussels are open. Turn off heat, add butter and chopped green onions, toss once and put the lid back on. Allow to sit for 4 more minutes before serving.

Season mussels with salt and pepper to taste and serve with either crusty bread or crackers.
