1 Lb H-E-B® Penne Pasta
1/2 cauliflower, cut into 2-inch pieces
2 Tbsp olive oil
1 H-E-B® Seasoned Chicken Breast, cut into thin strips
1 cup(s) cherry tomatoes
2 cup(s) mushrooms, sliced
15 fl oz H-E-B Saucy Cajun™ Pasta Sauce
1/2 cup(s) H-E-B® Parmesan Cheese, grated
1/2 cup(s) H-E-B® Panko Bread Crumbs

Preheat oven to 350°F.
Bring 2 large pots of water to boil; in 1 pot cook pasta according to package directions, and in second pot cook cauliflower 2-3 minutes; drain and set aside.
Heat olive oil in a large sauté pan over medium high heat, then add chicken, tomatoes and mushrooms; cook until thoroughly browned, about 7 minutes.
Combine pasta, cauliflower, chicken mixture, pasta sauce and Parmesan cheese into a large bowl; place in a greased 9x13 pan, cover with bread crumbs and bake 50 minutes.
