Recipe makes 8 Servings

2 Lb beets, rinsed, peeled & sliced
3 cup(s) water
3 Tbsp light margarine
2 Tsp raspberry vinegar
1 small orange, finely grated zest
1 Tsp caraway seeds
1/8 Tsp salt, to taste
1/8 Tsp freshly ground pepper, to taste
1 Tsp fresh snipped chives

Place beets in a medium saucepan with boiling water. Reduce heat to medium and cook 15 minutes or until tender. (Or, cook canned beets in liquid on medium heat until heated through, approximately 10 minutes). Drain well.
Melt margarine in a skillet over low heat. Add beets; toss to coat. Sprinkle with vinegar, orange zest, caraway seeds, salt, and pepper. Cook, tossing gently, until beets are heated through, 3 to 4 minutes. Transfer to a serving bowl. Garnish with chives, if desired.
