Spicy Lingonberry Vinaigrette

Recipe makes 30 Servings

1/3 cup(s) H-E-B Souper Fruit Ligonberry, Cranberry & Grape
1 Tsp balsamic vinegar
1/2 Tsp Dijon mustard
1 Tsp serrano peppers, finely chopped
1 Tbsp cilantro, finely chopped
1/2 cup(s) grapeseed oil

Place H-E-B Souper Fruit, vinegar, mustard, serrano pepper and cilantro in a blender. Blend until 1 minute or until completely smooth.
With blender running, remove lid and add oil in a fine thin stream into lingonberry mixture until emulsified.
Chef's note: Use as a vinaigrette on a baby spinach or spring mix salad with fresh berries and feta cheese. Vinaigrette will keep in the refrigerator 3 to 4 days.
