1/4 cup(s) extra virgin olive oil
3 H-E-B Natural Boneless, Skinless Chicken Breasts, diced into bite sized pieces
1 cup(s) white onion, minced or finely diced
4 garlic cloves, minced
1 Tsp cumin
1 Tsp coriander
2 jalapeños, thinly sliced
6 cup(s) American Pantry Rosemary and Lemon Bone Broth
1/3 cup(s) fresh cilantro, chopped
2 cup(s) angel hair shredded cabbage
1/2 cup(s) cotija cheese, grated as needed for garnish
1/4 cup(s) lime juice

Instructions

Place a large soup pot over medium high heat.

Add olive oil, chicken, onions, garlic, cumin, coriander and jalapeños.

Sauté everything until chicken is slightly browned,

Add chicken stock, cilantro and cabbage.

Bring to a simmer and allow to cook until liquid is slightly reduced, approximately 30 minutes.

Season to taste as needed with salt and pepper and garnish with cotija cheese and lime juice as desired.
