Spicy Jalapeño Lime Soup with Chicken

Recipe makes 10 Servings

3 Tbsp canola oil
1 cup(s) onion, chopped
1 cup(s) celery, chopped
1 cup(s) carrot, chopped
1 Tbsp garlic, minced
2 jalapeños, thinly sliced
1 cup(s) tomatillos, chopped
1 Tsp ground cumin
64 Oz low sodium chicken broth
8 Oz chicken breast
15 Oz white beans, rinsed & drained
1 cup(s) cilantro, chopped
1/4 cup(s) lime juice, plus more for garnish

Heat oil in a large heavy bottom pot on medium-high.
Add onions, celery, carrots, jalapeños and tomatillos. Sweat 10 minutes, stirring frequently.
Add cumin, broth, and chicken. Bring to a boil then reduce to a simmer for 10 minutes or until chicken breast is cooked through.
Remove chicken from liquid, shred with a fork then return to pot.
Add cilantro and lime juice. Serve hot!
