8 4/5 Oz Central Market Farro
2 Tbsp Sonoma Gourmet Roasted Chile de Arbol Extra Virgin Olive Oil, plus more as needed to taste
1 cup(s) golden raisins
5 Oz arugula
1/3 cup(s) fresh mint, roughly chopped
1/2 cup(s) pine nuts, lightly toasted in a dry pan
1/4 cup(s) Four J Apple Cider Vinaigrette, as needed

Instructions

Cook farro according to package instructions then set aside. Add oil and raisins and fold into warm farro and allow to sit while preparing remaining salad.

In a large bowl add arugula, mint, pine nuts, and cooled farro and raisin mixture.

Add apple cider vinaigrette and toss everything thoroughly to combine and garnish with shaved pecorino, if desired. Season to taste as needed.
