Spiced Shrimp with Beans & Couscous

Recipe makes 6 Servings

1 Tbsp extra virgin olive oil
1 1/4 Lb shrimp, peeled and deveined
1 shallots, chopped
1 lemon, juiced
1/2 Tsp ground coriander
1/2 Tsp paprika
1/8 Tsp salt
1/8 Tsp pepper
1 1/2 cup(s) white beans, rinsed and drained
1 1/2 cup(s) Central Market Israeli Couscous, prepared according to package directions
2 Tbsp parsley, chopped

Place oil in a large sauté pan over medium-high heat.
Add shrimp, shallots, lemon juice, coriander, paprika, salt and pepper. Cook 4 to 6 minutes.
Add beans and 1/2 cup warm water. Cook 5 minutes or until warm. Serve on top of couscous with parsley.
