Spiced Fuji Apple Sour Cream Cake

2 Tbsp unsalted butter
2 large Fuji apples, cored and diced small
1 Tsp garam masala
4 Oz salted butter, softened at room temperature
1 cup(s) brown sugar
1 cup(s) sour cream
2 Tsp vanilla extract
1/4 cup(s) maple syrup
3 cup(s) H-E-B Organics Cake Flour
1 1/2 Tsp kosher salt
4 Tsp baking powder
2 large eggs
1 1/4 cup(s) half & half

Preheat oven to 350°F.
In a small non-stick pan set over medium heat, add unsalted butter and allow to melt before adding apples and garam masala and cook until apples are soft. Remove from heat and allow to cool completely.
In a stand mixer fitted with paddle attachment, cream together salted butter, sugar, sour cream, vanilla extract, and maple syrup. Continue to mix until sugar is mostly dissolved.
While mixture creams, in a separate bowl, sift flour, salt and baking powder together; set aside.
When sugar mixture is creamy add eggs one at a time while mixer runs at medium low speed.
Then, add half of the half & half and half of dry mixture and allow flour to completely absorb before adding remaining liquid and dry ingredients. Add cooled apples and turn mixer up to medium high speed to allow batter to get fluffy.
Pour batter into a greased 9"x13" casserole dish and bake for 30 to 45 minutes or until a toothpick inserted in center of cake comes out clean. Allow to cool before cutting.
Chef's Note: I like to frost this cake with a sour cream frosting or plain whipped cream. Garnish with your favorite nuts.
