Recipe makes 6 Servings

12 H-E-B Yellow Corn Tortillas, cut into thin strips
14 1/2 Oz red medium enchilada sauce
16 Oz H-E-B Easy Melt Queso Blanco, cubed
7 Oz white onion, diced
14 1/2 Oz H-E-B Diced Tomatoes & Green Chiles
12 Oz H-E-B Fully Cooked Beef Crumbles
1/4 cup(s) cilantro

Heat oven to 450°F.
Spray a 2 1/2-quart microwave-safe baking dish with nonstick cooking spray; set aside.
Combine tortilla strips, enchilada sauce, cheese, onion, diced tomato, beef crumbles and cilantro in a large bowl; toss to coat ingredients.
Pour enchilada mixture in prepared baking dish. Cover dish loosely with plastic wrap and heat in microwave oven for 5 minutes on high power.
Remove plastic wrap and bake on the center oven rack for 10 minutes until cheese is bubbly.
