Recipe makes 4 Servings

1/4 cup(s) Aldonza Extra Virgin Olive Oil
1 Tsp fresh garlic, minced finely or zested
6 Oz Central Market Organics Spring Mix, plus more as needed
1 cup(s) Spanish olives, thinly sliced
1/2 cup(s) manchego cheese, shaved or shredded
5 Oz Isabel Solid Light Tuna in Olive Oil, oil drained and tuna flaked
2 Tbsp red wine vinegar

In a small bowl add olive oil and minced garlic. Mix together and allow to sit for at least 5 minutes. Meanwhile, prepare salad.
In a large salad bowl, combine mixed greens, olives, and manchego cheese. Toss to combine; sprinkle tuna over salad.
For dressing add olive oil and garlic to salad along with red wine vinegar. Toss everything to coat and season to taste as needed.
