Recipe makes 4 Servings

2 Tbsp olive oil
1 zucchini, cut into 1/2-inch pieces
1 red bell pepper, cut into strips
3 carrots, peeled and cut into 1-inch pieces
1 small yellow onion, chopped
14 1/2 Oz H-E-B® Fire Roasted Diced Tomatoes
1 garlic clove, minced
2 Goya Chipotle Peppers in Adobo, chopped
2 cup(s) H-E-B® Brown Rice, cooked

Heat oil in a large sauté pan over medium-high heat; add zucchini, red bell pepper, carrots and onion, and sauté for several minutes.
When vegetables begin to brown, add in canned tomatoes, garlic and chipotle peppers; bring to simmer 4 minutes, then serve in a bowl over brown rice.
