Recipe makes 5 Servings

1 Tbsp H-E-B Olive Oil
1 medium white onion, diced
1 red bell pepper, diced
1 celery, diced
2 garlic cloves, minced
2 3/4 cup(s) water
1 cup(s) H-E-B Long Grain Brown and Wold Rice
1/2 Tsp dried thyme
15 Oz H-E-B Kidney Beans, drained and rinsed
1/2 cup(s) Hill Country Fare Cocktail Smoked Sausage, sliced
1/8 Tsp salt
1/8 Tsp pepper

Heat oil in a large non-stick skillet over medium heat.
Add onion, bell pepper, and celery. Cook until vegetables soften, about 3 minutes, then add garlic and cook 1 minute.
Add water, rice and thyme and bring to a boil. Reduce heat, cover, and simmer until rice is done, about 30 minutes.
Remove from heat then stir in beans and sausage. Cover and let sit 5 minutes.
Salt and pepper to taste before serving.
