Smothered Chicken Verde & Tater Tot Casserole

Recipe makes 6 Servings

2 Tbsp canola or vegetable oil
1 1/2 Lb Mi Tienda Pollo Con Chili Verde
10 1/2 Oz cream of jalapeño soup
3 cup(s) H-E-B Fancy Shredded Colby Jack Cheese, shredded, divided use
28 Oz tater tots, frozen

Preheat oven to 375ºF.
Set a non-stick sauté pan over medium-high heat. Add oil and chicken and sauté until cooked and slightly browned.
Set chicken aside to cool slightly. Then add chicken to an 8x8 or 9x13 inch oven safe casserole dish.
Spread chicken out evenly in dish and mix in soup to evenly distribute, add 1 cup of cheese, and tater tots evenly scattered on top. Cover with remaining cheese.
Bake for 30 to 40 minutes or until cheese is crispy and tater tots are just browned on edges. Allow to cool before serving.
Chef's Note: I like to garnish this casserole with a little guacamole and cilantro.
