Smoky Spanish Rice with Almonds

Ingredients

Recipe makes 6 Servings

4 Tbsp salted butter
3 Tbsp shallots, finely chopped
1 1/2 cup(s) Atry Smoked Basmati Rice
3 cup(s) chicken stock
1/3 cup(s) roma tomatoes, seeded and chopped
2 Tbsp pimento
2 Tbsp flat leaf parsely
1/4 cup(s) smoked almonds, finely chopped

Instructions

Add butter and shallot to a medium sized sauce pan. Sauté over medium-high and cook about 3 minutes, just to soften.

Add rice to pan and stir to coat with butter. Add chicken stock.

Bring to a simmer and then reduce heat to low. Cover rice and cook for 18 to 20 minutes, or until stock has been absorbed and rice is cooked al dente.

Add tomato, pimentos, parsley and almonds. Stir through and cover for 2 minutes before serving, just let flavors blend. Adjust flavor with salt and pepper to taste
