Smokey BLT Potato Salad

Recipe makes 8 Servings

1 1/2 Lb baby potatoes
1/3 cup(s) avocado oil mayonnaise
1 1/2 Tsp Texas Olive Ranch Mesquite Olive Oil
1 1/2 Tsp fresh garlic, finely minced
1 Tsp sea salt
1/2 Tsp black pepper, freshly ground
4 slices H-E-B Uncured Applewood Smoked Bacon, finely diced and cooked until crispy
1/2 Pt Angel Sweet tomatoes, quartered
1 Oz fresh arugula
1/4 cup(s) green onions, thinly sliced

Bring a large pot of water to a boil. Add potatoes. Boil for 15 to 20 minutes, or until tender/firm.
Cut potatoes in quarters, spread out on a baking sheet and chill in refrigerator for 30 minutes.
In a bowl whisk together mayonnaise, smoked olive oil, garlic, salt and pepper. Add bacon, tomatoes and chilled potatoes. Stir thoroughly to coat.
Add arugula and green onions. Toss gently and serve immediately.
