Smoked Vanilla Bean Dessert Sauce

Recipe makes 8 Servings

2 vanilla beans
2 1/4 cup(s) heavy whipping cream
1/3 cup(s) Steen's Pure Cane Syrup, plus more as needed to sweeten
1/4 Tsp smoked sea salt

Instructions

Preheat smoker to 160º to 180ºF.

Set vanilla beans onto a small bed of foil and place in smoker for approximately 1 hour. Remove and allow to cool.

Slice open cooled vanilla beans and using a knife, scrape out the smoked vanilla bean seeds and set aside. (Reserve vanilla beans for another use.)

In a stand mixer with the whisk attachment, add heavy cream, pure cane syrup, scrapped vanilla bean seeds and smoked sea salt.

Whisk on medium speed until cream just starts to thicken to the consistency of a thick sauce. Do not whip to soft peaks.

Chef's Note: This is fantastic over any pie or drizzled over any fancy pastry.
