Ingredients

Recipe makes 8 Servings

1 Tbsp olive oil
6 Roma tomatoes, sliced in half
1/2 white onion, sliced in half
1 jalapeño, sliced in half lengthwise
5 garlic cloves, left whole
1 Tsp kosher salt
1/4 Tsp black pepper
1 smoked piquin pepper
1/4 Tsp ground cumin
1/4 cup(s) cilantro
1/2 lime, juiced

Instructions

Preheat smoker to 250°F.

In a large bowl, combine oil, tomatoes, white onion, jalapeño and garlic. Season with salt and pepper.

Place vegetables directly on grate and smoke an hour.

Remove vegetables from smoker and cool slightly.

In the bowl of a food processor, combine vegetables, 3 cloves of garlic, piquin pepper, salt, pepper, cumin, cilantro and lime juice. Blend until smooth but not liquefied, about 15 to 25 seconds. Depending on size of garlic, add additional smoked cloves to taste.

Chef's Note: Serve salsa over smoked chicken or with chips.
