Ingredients

1 cup(s) kumquats, washed, dried and thinly sliced
2 Tbsp fresh orange juice
2 Tbsp lime juice
1/2 cup(s) red onion, very thinly sliced or julienned
1 1/2 Tsp honey
2 Tbsp extra virgin olive oil

Instructions

In a small bowl, combine kumquats with orange and lime juice, red onion, honey and olive oil.

Toss kumquat mixture together to coat. Season to taste and set aside.

Lay slices of salmon out onto a plate to cover completely. Drizzle a little liquid from kumquat salad over salmon and add salad evenly over salmon.

Season with fresh cracked pepper and serve.
