Smoked Garlic Vinaigrette

Recipe makes 4 Servings

4 garlic, follow recipe for smoked garlic bulbs
1/4 Tbsp lemon, juiced
1 Tbsp Organic Dijon Mustard
1 Tsp black pepper
1/2 Tsp kosher salt
1/2 cup(s) grapeseed oil

Place smoked garlic cloves, lemon juice, mustard, black pepper and salt together in a blender.
Pulse together to blend smooth then while the blender is running at low speed slowly add in oil to form an emulsion. You can do this entire step by hand by mincing up garlic and then blending all the ingredients and slowly whisk in oil to form an emulsion if you wish.
Season vinaigrette with more salt and pepper if needed and refrigerate until ready to use.
