Ingredients

Recipe makes 6 Servings

1/3 cup(s) red onion, finely chopped
1 Tbsp olive oil
2 Tbsp dry sherry (not "cooking sherry")
1 Tsp dry thyme
1 1/2 cup(s) Atry Smoked Basmati Rice
1/3 cup(s) dried cranberries
2 Tbsp salted butter
1/2 Tsp sea salt

Instructions

Set a skillet over medium-high heat. Add onions and olive oil to skillet and stir. Sauté 5 to 6 minutes to soften onions.

Add sherry and thyme to onions and reduce until sherry has evaporated. Add water to pan 1 tablespoon at a time and continue to sauté onions until very soft, about 5 more minutes.

Rinse rice well under cool running water. Add rice and 3 cups of water to pan. Stir, and bring to a boil.

Reduce heat to low and cover. Allow rice to simmer 16 to 18 minutes, adding additional water as needed to prevent drying out.

Add cranberries, butter and salt, and stir to fluff. Cover and allow to sit 1 to 2 minutes before serving.
