Recipe makes 8 Servings

2 Tbsp extra virgin olive oil
1 medium shallot, minced
1 Tbsp garlic cloves, minced
1 Tbsp Mexican oregano
1 Lb chicken breasts, diced
1 Tsp Mi Tienda Sazon Seasoning
2 cup(s) Atry Smoked Basmati Rice
2 3/4 cup(s) H-E-B Organic Chicken Stock
1 cup(s) Four J Tomatillo & Avocado Fish Taco Salsa

In a large Dutch oven set over medium-high heat, add 2 tablespoons of olive oil.
Add shallots, garlic and oregano and stir fry until onion and garlic are translucent.
Add in chicken and sazon seasoning, stir fry an additional 3 to 4 minutes.
Add rice and continue to stir fry an additional 2 to 4 minutes.
Add chicken stock and salsa and stir to incorporate. Bring liquid to a low boil then reduce heat to low and cover.
Continue to cook on low 20 to 25 minutes or until all the liquid is absorbed.
Season with more sazon seasoning as needed to taste and serve.
