Smoked Almond Pesto on Crostini

2 loaf of ciabatta
2 cup(s) smoked almonds
1 1/2 cup(s) manchego cheese
2 cup(s) basil leaves, packed
3 fresh garlic cloves
1 Tbsp lemon, juiced
1 cup(s) extra virgin olive oil

Preheat oven to 350°F. Cut bread into slices about 1/2 inch thick. Place on a sheet pan and toast until just browned and crunchy (about 10-15 minutes).
Place all the remaining ingredients except the olive oil into a food processor and pulse until all ingredients are minced very fine.
Add in olive oil and pulse 2-4 times to just get the oil blended. Remove and spread a generous amount of pesto over each toasted crostini. Enjoy immediately!
