Smoked Adobo Spanish Style Rice

Recipe makes 5 Servings

2 Tbsp extra virgin olive oil
1 medium shallot, minced
1 large fresh garlic clove, minced
1 Tsp ground cumin
2 cup(s) Atry Smoked Basmati Rice
1/2 cup(s) Red Spoon Crushed Tomatoes
3 Tbsp Red Rio Adobo Sauce
2 1/2 cup(s) water

Place a sauce pot with a tight fitting lid over medium heat and add olive oil, shallots, garlic and cumin. Stir-fry until garlic and shallots are translucent, about 3 to 4 minutes.
Add dry rice and stir-fry 3 to 4 more minutes (rice should begin to smell slightly nutty).
Add tomatoes and adobo sauce, and cook another 3 minutes.
Stir in water and bring to a simmer. Cover, turn heat to very low, and cook about 20 minutes.
Season to taste with salt and pepper and fluff rice with a fork. Serve.
