Smoked Acorn Squash with Marshmallow Cream

1 large acorn squash, cut in half and seeds scrapped out
8 Oz unsalted butter
3 cup(s) mini marshmallows
1/2 Tsp kosher salt
1/2 Tsp apple pie spice
1/4 Tsp vanilla extract

Preheat smoker to 180ºF and coals should be ashen white before adding soaked wood chips (cherry or pecan works best for this application, feel free to use your favorite.) Preheat oven to 350ºF.
Arrange squash halves cut side down on grilling surface and close lid. Slow smoke for 1 hour then transfer to a roasting pan and move to oven to finish roasting for another 30 - 45 minutes or until tender.
Meanwhile, prepare marshmallow cream by adding butter and marshmallows to a non stick pot or large pan. Add in salt, apple pie spice, and vanilla, whisk together until marshmallows are completely melted. Set aside and keep warm.
When squash is tender, scrape out meat into a casserole dish and drizzle with cream. Season with salt and pepper to taste. Serve immediately.
