2 H-E-B Natural Pork Center Loin Chop Bone‑In Thick
1 Tsp Southside Market Coarse Ground Oak Smoked Black Pepper, plus more as needed

Prepare brine according to Chihuahua Smoked Salt Brine recipe on
Place pork chops in brine and refrigerate for at least 8 hours or overnight.
Once brined, preheat grill to medium-high. Meanwhile, rinse pork under cold running water, pat dry and season liberally with oak smoked black pepper.
Oil hot grill liberally then grill pork at least 6 to 10 minutes or until nicely marked.
Flip pork, repeat cooking time then lower heat and finish cooking until pork reaches at least 150ºF internal temperature.
Remove pork chops to plates and allow to rest before serving. Season to taste as needed.
