Recipe makes 10 Servings

10 1/2 Oz can H-E-B Select Ingredients Cream of Jalapeño Condensed Soup
1 1/2 cup(s) Greek yogurt
1/3 cup(s) shallot, finely diced
1 1/2 Tsp Central Market Organics Cajun Seasoning
1 cup(s) milk
2 1/2 Lb Yukon Gold potatoes, peels left on, cut into 1 inch cubes
2 cup(s) H‑E‑B Select Ingredients Sharp Cheddar Thick Cut Shreds
1/4 cup(s) green onions, green and white parts finely chopped
4 slices thick cut bacon, cooked and chopped

In a small bowl mix together soup, Greek yogurt, shallots and Cajun seasoning. Whisk together.
Place a layer of potatoes in the bottom of slow cooker.
Top with 1/3 of each: soup mixture, cheese. Repeat with 2 more layers.
Cover and cook on low for about 4 hours, or until potatoes are tender. Top with green onions and bacon and stir through just before serving.
Chef's Note: This can also be done in the oven by cooking at 400ºF, covered for about 1 hour. Also makes a great 1 pot dinner by adding 2 cups of fully cooked chicken.
