Sizzling Thai Tofu with Lime Sriracha

Recipe makes 4 Servings

1 Banyon Foods Extra Firm Tofu
1 Tsp fine sea salt
3 Tbsp avocado oil
1 cup(s) Cookwell & Company Honey Lime Sriracha Glaze
1/2 cup(s) green onions, finely chopped
1/2 cup(s) fresh cilantro, finely chopped
2 Tbsp fresh basil, finely chopped
1/4 cup(s) roasted cashews with sea salt, chopped

Drain tofu: place layers of paper towels on a baking sheet. Lightly salt both sides of tofu and lay in a single layer on paper towels. Cover with more layers of paper towels and a second baking sheet, bottom side down (tofu should be completely covered). Add a 2-3 pound weight to baking sheet to press tofu firmly (bricks or heavy cookbooks work great). Drain excess moisture 20 minutes.
Heat a heavy skillet (cast iron is ideal) on medium-high.
Add avocado oil and tilt to coat pan. Fry tofu in small batches until golden brown and crispy, about 2-4 minutes per side. Remove from pan and cover with foil to keep warm. Repeat with remaining tofu.
Drizzle with Honey Lime Sriracha Glaze just before serving and top with green onions, cilantro, basil and cashews. Great with black or jasmine rice.
