Recipe makes 2 Servings

2 Tsp grapeseed oil
1/4 cup(s) shallot, very finely diced
1/4 cup(s) red bell pepper, very finely diced
1/2 cup(s) frozen sweet corn, fresh or drained canned
1 10.5 oz can H-E-B Cream of Poblano Soup
10 1/2 Oz half and half, just fill up empty soup can
1 1/2 Oz H-E-B Select Ingredients Atlantic Lemon Pepper Smoked Salmon, diced

Heat a pan over medium-high heat adding oil, shallots and red bell peppers to pan.
Stir and cook until shallots soften and turn translucent, or about 3 to 4 minutes.
Add corn, condensed soup, half and half and salmon. Bring to a simmer for 3 to 4 minutes, stirring constantly.
Remove from heat, and sit for 10-15 minutes for flavors to come together. Season with salt and pepper to taste.
Serve with a great crusty bread or toasted naan.
