Simple Gluten Free Lasagna

Recipe makes 12 Servings

2 Tbsp olive oil
1 cup(s) onion, chopped finely
1 Lb ground beef
1/2 Lb hot Italian sausage, removed from casing and chopped
24 Oz Orti Di Calabria Marinara Pasta Sauce
2 large egg
16 Oz whole milk ricotta
1/4 cup(s) basil, chopped finely
1 cup(s) Pecorino Romano cheese, grated
1 Tsp garlic, minced
3 cup(s) part skim mozzarella, shredded
1 pkg. gluten free no-boil lasagna noodles

Preheat oven to 375ºF.
Heat oil in a large nonstick skillet over medium-high. Add in onions, beef and sausage. Cook several minutes until meat is well browned. Add in sauce, bring to a simmer and set aside.
Combine eggs, ricotta, basil, garlic, Pecorino cheese and half of mozzarella together in a bowl. Whisk to incorporate.
Lightly grease a 9x13-inch baking dish, then spread a thin layer of meat sauce on bottom.
Spread in first layer of noodles followed by cheese mixture and meat sauce. Continue 2 more times.
Top lasagna with remaining sauce and cheese.
Cover loosely with foil and bake 20 minutes. Then remove foil and finish baking. Let cool 15 minutes before serving.
