Ingredients

Recipe makes 6 Servings

1 Lb boneless chicken breast, skinless
1 Tsp chili powder
1 Tsp McCormick Cumin
1 Tbsp pure olive oil
1 garlic, chopped
1 cup(s) cherry tomatoes
1 cup(s) light beer
2 cup(s) Texas Two-Step Tomatillo & Green Chili Stew Mix
1 H-E-B Rice with Corn and Poblano

Instructions

Season chicken with chili powder and cumin.

Place a skillet on medium-high heat.

Add oil then sear chicken 4 to 5 minutes per side, depending on thickness of the chicken. Remove from pan and set aside.

To the same skillet, add chopped garlic and cherry tomatoes. Sauté 3 to 4 minutes or just until tomatoes burst.

Add beer, stew and seared chicken to the pot. Simmer 15 minutes.

Cook rice according to package directions.

Serve chicken over cooked rice.
