Sicilian Chicken Marsala

2 Tsp kosher salt, plus more as needed to taste
2 Tsp black pepper, plus more as needed to taste
2 cup(s) H-E-B Organics Unbleached All-Purpose Flour, plus more as needed for dredging
1/3 cup(s) extra virgin olive oil
1 Lb H-E-B Extra Thin Sliced Chicken Breasts
8 Oz sliced mushrooms
1/2 cup(s) Marsala wine
1/3 cup(s) Italian parsley, roughly chopped

In a shallow dish add salt, pepper and flour together and mix to combine.
Place a non-stick skillet over medium-high heat and add olive oil, allow to get hot.
Dredge each chicken breast in flour mixture, coating evenly on both sides.
Add chicken to oil and pan fry 2 to 3 minutes or until nicely browned. Flip chicken and cook an additional minute before removing to a plate.
In same pan add mushrooms and pinch of salt and pepper. Sauté 2 to 3 minutes before adding wine. Cook wine 3 to 5 minutes before adding chicken back to pan.
Flip chicken a few times in sauce to evenly coat. Cook a few more minutes or until liquid has reduced to sauce consistency.
Garnish with parsley if desired and season to taste as needed.
